Description
For a decadent dessert: 210g each of plump peaches in prosecco and champagne, and juicy wild blueberries in gin. In the 18th century peaches, cherries and apricots were popular as ‘brandy fruits’; fresh fruit was a luxury foodstuff and so preserving fruit in spirits was a practical way to extend the life of seasonal fruit. Spoon over ice cream, add to trifles or follow the 18th century example and enjoy with syllabub or, in Scotland, boozy raspberries in a cranachan. Delicious prosecco and gin-steeped fruit, handmade near the village of Wye in Kent.
